Coming April 2026

There is nothing worse than putting the kettle on, splitting a scone open... and finding it dry, heavy, or disappointing.

This masterclass is designed to change that.

In Perfect Scones, I teach you two reliable, adaptable methods that takes the fear out of scone making and gives you consistent, beautifully risen scones with soft centres, every time.

This isn't about chasing the perfect looking scone. It's about understanding the dough, trusting your hands, and knowing why things work.

What you'll learn

This class focuses on technique first, so you can confidently adapt the method to suit both sweet and savoury scones

You'll learn:

What makes a scone light, tender, and well risen

How to handle dough gently without overworking it

How to control moisture so scones stay soft, not dry

How to cut and bake scones for even rise and colour

How to recognise when they're perfectly baked

Once you understand the method, the variations become simple.

Whats included in the class

The master plain scone method

Cheddar and chive scones

Brown sugar scones

White chocolate and cranberry scones

Guidance on baking, storing, freezing, and reheating

A note from me

I've been baking professionally for over 35 years, and scones are one of those deceptively simple bakes that reward understanding far more than precision

Once you learn how the dough should feel, everything else falls into place.
